What to Do With All That Zucchini: White Pizza-Stuffed Zucchini Boats

It's zucchini season, and gardens and farmers markets are overflowing with this versatile veggie. If you've ever grown zucchini, you realize all too well the need for recipes where zucchini is the main ingredient, which is one of the reasons stuffed zucchini has become such a classic.

There are endless variations for zucchini stuffed with meat, but I'd happily forsake the meat for the flavorful mixture of ricotta, mozzarella, garlic, basil, and oregano that fills these White Pizza Stuffed Zucchini Boats from Kitchen Treaty. Karen adds some thinly sliced fresh basil for the perfect finishing touch to this wonderful-sounding Meatless Monday dish.
