Turn Leftover Easter Eggs Into a Delicious Egg Salad Pita Sandwich

Planning a Meatless Monday dish to make on the Monday after Easter is a no-brainer for some people, because there are all those Easter hard-boiled eggs that need to get turned into something resembling a meal. I'm a huge fan of hard-boiled eggs any time of year, and this Egg Salad in Pita with Green Olives, Green Onions, and Dijon is one of my favorite ways to use them. If you've never considered adding green olives to egg salad, I highly recommend it!

When it's too hot to turn on the stove, either grilling or using the slow cooker are my preferred ways to cook and keep the kitchen cool. Meatless Monday: Vegetarian Lentil Taco Salad

I've confessed more than once to being a bit obsessed with lentils, so no wonder a lot of my Meatless Monday picks include these nutritious and delicious little legumes, and of course this lentil addiction means there are lots of dishes with lentils on my own blog. Recently I had an idea for lentil lettuce wrap tacos on my "to cook" list, which somehow got translated into Vegetarian Lentil Taco Salad with Tomatoes, Olives, and Avocado once I started making it.
