Spicy Pumpkin Soup with Cilantro Pepita Pesto from Pinch My Salt

Spicy Pumpkin Soup with Cilantro Pepita Pesto from Pinch My Salt

As much as I love winter squash, I'm not a fan of sweet winter squash soups, which is why I love the sound of this Spicy Pumpkin Soup with Cilantro Pepita Pesto from Pinch My Salt. Nicole has given the soup interesting flavors with chiles, smoked paprika, cumin, garlic, and onions, and then she tops it with a pesto that's made from pepitas, garlic, cilantro, Parmesan, lime juice, and olive oil. I'd love this spicy soup for Meatless Monday meal, and I think it would make a great Thanksgiving appetizer soup as well.

Meatless Monday: Butternut Squash, Peanut, and Chipotle Soup

It's butternut squash season, and I couldn't be happier about it!  I've loved this creamy winter squash ever since the days my Grandma Denny used to bake it wrapped in foil and then mash it with (lots of) butter, salt and pepper.  These days I like a little less butter with my squash, but I still prefer savory butternut squash dishes and this Butternut Squash, Peanut, and Chipotle Soup from The Perfect Pantry really sounds like a Meatless Monday win   Read more >

Toasted Walnut Spinach Pesto Pasta from Family Fresh Cooking

Pasta with freshly-made pesto is a quick and easy meal, and lots of pasta fans love making basil pesto in the summer when fresh basil is abundant in gardens or farmers markets. However, if you use something other than basil as the base of the fresh pesto, you can enjoy pasta with fresh pesto all year round. I love the sound of this Toasted Walnut Spinach Pesto Pasta from Family Fresh Cooking, a perfect meatless dish for Meatless Monday.   Read more >

Vegan Black Bean Soup with Cilantro & Green Tabasco from Kalyn's Kitchen

The first time I made this Spicy Vegan Black Bean Soup with Cilantro and Green Tabasco, it wasn't vegan at all. But as we were eating the soup, my nephew Jake and I kept remarking on how we thought the soup would have been better without the ham, which kind of took over the spicy flavor we both loved. I didn't need any more encouragement to make this again as a vegan soup, perfect for Meatless Monday on my own blog. With all the flavors like garlic, cumin, oregano, cilantro, and green Tabasco sauce, I think this is the best black bean soup I've ever made, high praise from someone who loves black beans like I do.   Read more >
