A Meal With Mexican Flair: Southwestern Avocado Salad

Anything with Mexican flair speaks to me. This Southwestern salad can be whipped up in less than five minutes. It's loaded with avocado, tomatoes, and chunks of white cheddar all blanketed in a creamy chipotle dressing‐let me dive right in! Serve as a side, or top this dish with grilled shrimp or chicken, toss a few Coronas into the mix, and call it a night.

 

Southwestern Avocado Salad

Ingredients

2 ripe avocados, cubed

1 pint cherry tomatoes, halved

5 oz white cheddar cheese, cubed

1/4 cup chipotle ranch dressing

Splash of lemon juice

Salt and pepper

 

Directions

Toss everything together in a large bowl and you're done!

Delicious and healthy salads that are crunchy are my favorites. I think that I like to make these salads extra crunchy to satisfy my craving for crunchy foods. Crunchy salads keep me away from nachos and chips! I used red quinoa, which is not only so healthy but it tastes wonderful. I added chick peas (another favorite of mine), scallions and radishes to the quinoa, then topped it with a lemony dressing.
