Weekend Menu Planning: Roasted Winter Squash will Warm Up Your Family
Bring up the subject of winter squash in a crowd and someone will immediately say they don't like it. When I hear this, I always wonder whether the person has ever tried roasted squash. Of course I'm a believer in roasting vegetables of every kind, but winter squash takes especially kindly to roasting at high temperatures, turning golden, slightly sweet, and caramelized while it cooks. Roasted squash also pairs well with lots of other delicious flavors such as butter, lemon, lime, orange, tahini, soy sauce, herbs, maple, feta cheese, blue cheese, nuts, and garlic, so the possibilities are pretty much endless.
