Meal Planning: 9/9-9/15
We’re nearing the end of our second week of concerted efforts toward better meal planning and so far, things are mostly good. We’ve been a little more swamped than normal with work, which has resulted in some pretty late dinners, but have stuck to the plan and have saved what little is left of our evenings by not having to scramble to put together meals at the last-minute. Our Plan: Breakfasts and Lunches: Same as last week Monday-Tuesday: Meatballs + spaghetti squash (we subbed sausage for quinoa) Wednesday: Oven-roasted Thai Chicken Thursday-Friday: Chicken Enchiladas Fun treat: Pumpkin Oatmeal Raisin Cookies We’ve pretty well solidified Sunday as our shopping and prep day. . . .
