Homemade Lentil-Mushroom Burgers: An Easy and Delicious All-American Meal

She sautés cremini mushrooms and onions and combines them with cooked lentils and sun-dried tomatoes to make a tasty patty. If you know me, in real life, it’s no secret that I L-O-V-E a burger. I’m pretty much into them at any time of the day and while beef burgers are queen--I love a veggie/legume burger too. I’m not talking the freezer-section kind (nothing wrong with those), I’m talking about the kind you can whip up at home and load with savory flavors.

Grilled Portobello Mushroom Burgers from Simply Recipes

Grilling season has arrived in the northern hemisphere, and for quite a few years now I've been enamored with grilled mushrooms. Of course I love mushrooms no matter how you cook them, but the high heat of the grill intensifies the flavor of mushrooms and adds a slightly charred touch that really turns them into something special. When I spotted this Grilled Portobello Mushroom Burger at Simply Recipes, it struck me as being a perfect Meatless Monday dish. Elise has dressed hers up with the addition of sun-dried tomatoes, spinach, and some grilled onion, but I think the grilled portobellos would also taste wonderful on a bun with just some mayo.   Read more >
