A Hearty Barley, Caramelized Onion, and White Bean Stew
Editor’s note: Eating meatless doesn’t mean you have to leave dinner table hungry, as Dara from The Cookin’ Canuck proves with this hearty white bean stew. After slowly caramelizing the onions, this stew practically cooks itself. Just add barley, white beans, and spinach as directed and let simmer. If you double the recipe, you can even eat this healthful meal all week long. --Jane
I’ll admit that I get a high out of creating a vegetarian stew recipe for Meatless Monday that is filling, low in calories, packs a punch of protein (beans) and fiber (barley and spinach) and, most importantly, my family enjoys (thank you, caramelized onions).
