Shrimp Tacos and a Weekly Menu Plan
I love shrimp. So I have been a bit disappointed in the past that, while my boys love fish (even the non-breaded and non-stick variety), I had not been able to get them to even try shrimp. So, like any good mama - I tricked them!
I told them we were having "fish tacos." They like fish and they like tacos, so I figured it just might work. They dug in as soon as I set their plates down and both said they loved it. Roo asked a few times what kind of fish was in the tacos, but I stalled in answering until he had finished his taco. He looked a little shocked that I had gotten the better of him, but conceded it was pretty good. Monkey said he loved shrimp and asked for more.
So, here's my recipe for shrimp tacos. I started with the recipe found here, then tweaked it a bit to fit what I had on hand.
1 lb shrimp, uncooked
1 teaspoon chili powder
1 teaspoon sugar
1 teaspoon garlic salt
1/4 teaspoon crushed red pepper
2 Tablespoons olive oil
fresh pico de gallo
flour tortilla shells
Combine seasonings in a ziplock bag. Add shrimp and toss to coat, then pour into a saute pan. Saute in olive oil until the shrimp are pink, about 4 minutes or so. Place on tortilla and top with cheese and pico de gallo.
This was super easy and a nice, light summer meal. I picked up pico de gallo from our local farmer's market, which is one of my absolute favorite summertime treats. This made about 8 tacos, but I think I would double it next time so I have leftovers for lunch!
On to my menu! We're getting into the full swing of fall busy-ness, even though summer isn't even over yet! The Coach is back at football practices and Roo has started flag football and has practice three days a week. • Me: Monday - leftovers; Tuesday - Leftovers; Wednesday - work lunch; Thursday - leftovers; Friday - leftovers
• Monday – Tacos, salad
• Tuesday – Hot Dogs, chips, fruit
• Wednesday – Nachos (made with leftover taco meat), salad
• Thursday – Sandwiches, chips, fruit
• Friday - Pizza
• Saturday – Cheeseburgers, baked beans, fruit
• Sunday – Steak, potatoes, green beans
