The Recipe Worked, But I'm Exhausted
I am not afraid of my kitchen. I will experiment with new recipes even though my kids are deathly afraid of food. They enjoy grilled cheese, hamburgers, cereal, chicken nuggets, etc. and I completely blame my mother-in-law for that only because she doesn't have a computer and she doesn't read my blog.
I adore The Pioneer Woman television show and all her foodie ideas but have never tried any of her recipes before. They look so good on my old tv so when I finally found her book at my local Costco store, I decided to try at least one recipe to start. It was delicious.
Unfortunately, I didn't get going until 7 o'clock at night. I chose the white chicken enchiladas. This is a very detailed cookbook, thank goodness, with pictures too. There are many steps in this recipe and a lot of ingredients.
I don't know if it was because of my lack of experience with this particular recipe or what it was, but I didn't get this completed until after 9 p.m. I was almost too tired to eat, but I did anyway. The food tasted remarkable and it made a huge amount so we had leftovers.
The most surprising thing was the fact that my kids at it. I think the aroma of the cheese, chicken, garlic, salsa, and peppers mixing all together was too much for them to resist. They loved it.
I highly recommend this recipe but I would suggest planning it out well in advance and allowing a good amount of time for preparation, assembly, and baking. Let someone else do your clean up too.
