(Recipe) Crockpot Beer Chicken & Dinner Menu This Week
I'm attempting to write this while Sofia is running around like an Elf loaded up on sugar cookies, yelling "PUP PUP" at the top of her lungs...and I'm contemplating chugging a HUGE glass of wine.
This weekend we decked the halls inside and out, baked sugar cookies, saw Santa & checked out some Christmas lights. We also came up with our gift lists, let the Christmas shopping begin!
On Sundays I like to bust out my dear friend, the Crockpot. And this Sunday I felt like boozing her up.
Crockpot Beer Chicken
Recipe makes 4 servings
4 chicken breasts (I use boneless frozen Perdue breasts from Costco)
1 onion , sliced
1 bag of baby carrots
1 bag of small white potatoes, quartered
1 can of green beans, drained
1 can of beer (I use whatever Sam Adams we have hanging around)
1 stick of butter, cut into pieces
A good sprinkle of: season salt, garlic powder & pepper
A small pinch of thyme
1. Put all ingredients into the crockpot
2. Cook on low for 8-10 hours (if using frozen chicken) or 7-8 hours (if using thawed chicken)
*Picture doesn't show green beans or onion, I just started adding them! & I drizzle ranch over my entire plate.
Here's what we have cooking the rest of the week
Monday| One Pot Pasta & Grilled Italian Chicken that we didn't get around to making last week. The ingredients keep staring me in the face whenever I open the fridge, can't wait to try this out!
Tuesday| Grilled cheese & tomato soup. We use a combo of American and cheddar cheese, then butter the shit out of each side of the bread and cook on medium heat, with a lid over the pan for half of the time to help melt the cheese. And for the tomato soup, it's Campbell's all the way. I fill the soup can with 1/2 water and 1/2 milk to make it creamy then I add a pinch of salt and a pinch of sugar.

Wednesday| Cheesy Italian Chicken (new recipe I randomly came up with, here's to hoping it's good!) served with cheesy rice & French green beans, sautéed with garlic & bacon.
Thursday| Baked Chicken Fajitas made the menu again this week, we love them that much. I'll share the recipe soon!
Friday| Dinner out. Last week we went to Cheesecake Factory for my sisters birthday and I felt so guilty cheating on my nachos but the shrimp scampi sure was good!
Nachos will be in my bed this Friday, mark my words!
Saturday| Pasta & meat sauce served with cheesy garlic bread & salad (this seasoning is a salad staple, my Grandpa got me hooked...when I was young my Mom would always say it was too expensive to buy, so now I literally dump it on my greens!).
