Parmesan Crusted Tilapia and a Weekly Menu Plan
We love tilapia at our house! It is such a mild and easy to prepare fish, and my kids so far love it no matter how I cook it. Earlier this summer, we made Honey Lime Tilapia, which Monkey especially loved. Recently, we tried make Parmesan Crusted Tilapia. Since it was the height of zucchini and summer squash season, I also made some Parmesan veggies. I figured since the rest of our meal was all cheesy, I might as well make some Parmesan brown rice, too. The really easy thing about this meal was that the fish and veggies cooked at the same time in the oven, and while they were baking I was able to whip up the rice.
Parmesan Crusted Tilapia
6 Tilapia fillets
1 cup panko breadcrumbs
2/3 cup Parmesan cheese
1 teaspoon garlic powder
Beat the eggs in a shallow dish. Mix the breadcrumbs, Parmesan, and garlic powder in another shallow dish. Dredge the tilapia fillets through the egg, then coat with the breadcrumb mixture. Place on a baking pan and bake at 400 degrees for 18-20 minutes, or until fish is white and flakes easily.
The veggies were super easy. Slice up one zucchini and one summer squash into 1/4 inch thick slices. Lay flat on cookie sheet and drizzle with olive oil. Season with salt and pepper. Then sprinkle with Parmesan cheese (I was pretty generous with the cheese!). Bake at 400 degrees for 20 minutes. The rice was just as easy - cook brown rice as directed on the package (I made 4 servings). Stir in 2 tablespoons of butter and about 1/4 cup Parmesan cheese.
On to my menu! The Coach has his first game this week, Roo continues to have football practices, I have a meeting one night, we have back to school open house night, and The Coach and I are going to an MSU football game as a birthday present to him. Yeah. It's that kind of a week. Read on at your own risk - this is certainly not a fancy or very home-cooked week of meals!
