Eggplant Parmesan

Last week while visiting my parents house for the day my dad and I made a visit to my uncles garden. He was on vacation with his family and told us to " help ourselves" to some of his goodies. Healthy Strawberry Jam

This week we met our play group at a local strawberry farm for a fun morning of strawberry picking and picture-taking. I ended up getting close to four pounds of strawberries but I clearly underestimated our ability to polish off this many strawberries seeing as how it’s been two days and I am already planning another trip back. Banana Donuts with Peanut Butter Glaze

 I was looking for something new to make with overripe bananas when my inspiration for this recipe came about. Instead of reverting to my usual banana bread or banana muffin recipe I decided to use them in the form of a donut. I couldn't decide on what type of glaze to add until I was pouring a cup of coffee and my love affair with peanut butter and banana came to me.
