Your New Favorite Squash Recipe: Rosemary-Butternut Skillet Pie
There are some ingredients I'll absolutely never get tired of, and in the fall, butternut squash probably tops that list.
This delicious variety of winter squash (also called butternut pumpkin in some parts of the world), is a vegetable that I learned to like from my Grandma Denny. Grandma would cut up the squash, scrape out the seeds, and roast it wrapped in foil; then we'd scrape it away from the skin and eat it with lots of butter, salt, and pepper. SO good.
