Vegetarian Stuffed Peppers

When I was a kid my mom made stuffed peppers with rice, hamburger, onion, and green bell peppers, and I'd eat the rice and hamburger with a generous dollop of ketchup but wouldn't touch the pepper. Now I'm a huge fan of stuffed peppers of every kind, and I came up with this recipe for Vegetarian Stuffed Peppers with Brown Rice, Mushrooms and Feta after a Kalyn's Kitchen reader requested vegetarian stuffed peppers last October. Since then I've made this several times and I think I might even prefer these Meatless Monday stuffed peppers to my usual stuffed peppers recipe with meat. For sure this has turned into one of those favorite dishes where I always make the full recipe so I can stash some in the freezer for another meal on a day when I don't want to cook. And if you have family members who might turn up their nose at the pepper part like I did when I was a kid, these brightly colored orange, yellow, and red peppers just might win them over.
