Vegetarian Stuffed Peppers

Vegetarian Stuffed Peppers

When I was a kid my mom made stuffed peppers with rice, hamburger, onion, and green bell peppers, and I'd eat the rice and hamburger with a generous dollop of ketchup but wouldn't touch the pepper. Now I'm a huge fan of stuffed peppers of every kind, and I came up with this recipe for Vegetarian Stuffed Peppers with Brown Rice, Mushrooms and Feta after a Kalyn's Kitchen reader requested vegetarian stuffed peppers last October. Since then I've made this several times and I think I might even prefer these Meatless Monday stuffed peppers to my usual stuffed peppers recipe with meat. For sure this has turned into one of those favorite dishes where I always make the full recipe so I can stash some in the freezer for another meal on a day when I don't want to cook. And if you have family members who might turn up their nose at the pepper part like I did when I was a kid, these brightly colored orange, yellow, and red peppers just might win them over.

There's a short list of ingredients I could use over and over in recipes without the slightest possibility I'd ever get tired of them, and four things on that list are brown rice, green chiles, black beans, and avocados.  All those favorite ingredients make an appearance in this Slow Cooker Vegan Brown Rice Mexican Bowl with Black Beans, Bell Peppers, and Poblano-Avocado Salsa from Kalyn's Kitchen.  This is a recipe that starts out with brown rice and vegetable stock cooked in the slow cooker,  and yes, it works perfectly if you've never tried it.  Then can   Read more >

Warm-Weather Eating: Whole-Wheat Pasta Salad with Roasted Asparagus, Red Bell Pepper and Mushrooms

A few weeks ago I was wandering through the grocery store and found whole-wheat orecchiette pasta! (Here's how to pronounce orecchiette if you're not sure.) I love this pasta shape (whose name means "little ears" in Italian) and I knew immediately I'd be turning it into some sort of pasta salad. I happened to have asparagus and a few other veggies in the fridge, so this Whole-Wheat Orecchiette Pasta Salad with Roasted Asparagus, Red Bell Pepper and Mushrooms was the happy result.   Read more >

Chile Masala Tofu Scramble: Breakfast for Dinner Vegan Style

Lots of things that are traditionally thought of as breakfast foods taste great for lunch or dinner as well, and Janet from The Taste Space made this Chile Masala Tofu Scramble for a delicious meatless lunch. She used Chinese soft tofu paired with red bell peppers, mushrooms, Aleppo chile flakes, soy sauce, and Indian spices, and finished with a handful of fresh spinach. I like all these spicy flavors, and this tofu scramble sounds like a Meatless Monday meal that would really make your mouth pay attention.   Read more >
