Vegetarian Green Chile and Pinto Bean Mexican Casserole

It won't be long before it's too hot to turn on the oven for most of us, even if we're tempted by the idea of a cheesy casserole with Mexican flavors.

But since Cinco de Mayo falls on Monday next week, I couldn't resist sharing one of my very favorite Meatless Monday casseroles that I think would be a great way to celebrate with a Mexican food dinner. This Vegetarian Green Chile and Pinto Bean Mexican Casserole from Kalyn's Kitchen has whole canned green chiles layered with a delicious mixture of pinto beans, green chile enchilada sauce, sour cream and cheese for a casserole with all the flavors that make bean and green chile burritos such a favorite.
