Traditional Tacos with Tofu "Hamburger"

What could be a more perfect dinner for Cinco de Mayo than traditional tacos with folded corn tortilla shells and all the trimmings? But when this day set aside to celebrate Mexican heritage falls on Meatless Monday, these innovative Traditional Tacos with Tofu "Hamburger" from Letty's Kitchen sound even better. The tofu is purposely frozen (right in the package) and then thawed when you're ready to make the tacos; when the thawed tofu is fried it has a texture that closely resembles hamburger. Letty serves her tofu tacos with all the traditional toppings, like shredded cabbage or lettuce, avocado slices, grated cheese, chopped tomatoes, chopped green onion, chopped cilantro and of course, salsa.

Slow Cooker Spicy Brown Rice and Black Bean Cheesy Bowl

When it's too hot to turn on the stove, either grilling or using the slow cooker are my preferred ways to cook and keep the kitchen cool. On a hot day earlier this summer I made this Slow Cooker Spicy Brown Rice and Black Bean Cheesy Bowl, where the rice is cooked in the slow cooker with onions, canned black beans, diced green chiles and seasonings.
