Slow Cooker Rosemary and Thyme Potato Soup

Slow Cooker Rosemary and Thyme Potato Soup

After I featured Brussels sprouts for my last two Meatless Monday posts, I promised something different this week, and I think this Slow Cooker Rosemary and Thyme Potato Soup from Barefeet in the Kitchen sounds like meatless comfort food at its best! Not only that, it can cook all day long in the slow cooker, just in case you might have a few things to do on the Monday before Christmas. Mary suggests this can be topped with optional ingredients like cheese, chives, parsley, green onions (and even bacon if you don't care if it's meatless), and I'm guessing this is a Meatless Monday soup the whole family will enjoy!

Potato, Bean, and Kale Soup

This Potato, Bean, and Kale Soup from Fat Free Vegan Kitchen has the green color of kale combined with potatoes. To me those are certainly two reasons this soup seems a little Irish, even if it's actually a recipe with Italian roots. And I adore the tiny little potatoes Susan uses here; so maybe if you're cooking for kids you can even work a leprechaun theme into the soup!   Read more >

Meatless Monday: Slow Cooker Mushroom, Barley and Lentil Soup

I'm a huge fan of lentils, mushrooms and barley, and I love to make soups in the slow cooker, so when I spotted this recipe for Slow Cooker Mushroom, Barley and Lentil Soup from 365 Days of Slow Cooking, I immediately thought about how amazing this would be for a Meatless Monday dinner. Karen says this soup is so good that her meat-loving husband requests it for dinner. The soup cooks all day on low and then dried herbs are added for the last hour of cooking time for extra flavor.   Read more >

Slow Cooker Potato Soup from Budget Bytes

When Meatless Monday also happens to be Christmas Eve, I'm guessing an easy slow cooker soup might be just the thing for busy cooks. This Slow Cooker Potato Soup from Budget Bytes is made from ingredients you probably keep on hand, and most people would gobble this up with no clue it was a Meatless Monday dinner. Beth did use a little chicken base to add flavor, but you can sub vegetable base if you prefer. She also used potatoes with skins (which look a little bit like ham in the photo) but if you have kids, the soup might be an easier sell without the potato skins.   Read more >
