Skinny Veggie Crock-Pot Lasagna

This time of year is tough. It's cold outside so all you want to eat is comfort food, but you probably overdid it during the holidays, so you also want something that's a healthy option. I've got you covered with this Super Easy Skinny Veggie Crock-Pot Lasagna from Pinch of Yum for this week's Meatless Monday pick. Everything goes directly into the slow cooker (including the dry noodles), so the recipes comes together quickly, and it has a generous amount of veggies to balance out the noodles, sauce and cheese (which can be low-fat). Lindsay used kale, but if that won't fly at your house, use any vegetable the family enjoys.
