Quick and Easy Salsa Chickpea Tacos

It's that time of year when schedules are busy, so most any recipe with the words quick and easy in the title is going to sound like a winner. But some recipes are so easy (and yet still amazingly delicious) that I wish a creative food writer would come up with a more emphatic description; something that captures the idea that this can be on the table in 10 minutes, no actual cooking is required, it will taste amazing, and you will want to make it over and over! When we get that new recipe descriptor, I'm recommending Quick and Easy Salsa Chickpea Tacos from The Taste Space be labeled that way. If you're not a chickpea fan, make this with another type of beans, but personally I would gobble this up for an outrageously easy Meatless Monday dinner!
