Grilled Vegetable Gyros

Grilled Vegetable Gyros

I'm always in favor of Greek food, and through the years I've certainly gobbled down plenty of gyros made with meat. But I also love grilled vegetables, and when I saw this idea for Grilled Vegetable Gyros from Oh My Veggies, it sounded like a perfect Meatless Monday dish.  Mushrooms, red bell pepper, zucchini and onions are grilled (or cooked in a stovetop grill pan if you don't have a grill.) Then they're served inside warm pita bread with the traditional cucumber-dill sauce that always makes gyros taste so amazing.

Of course I love mushrooms no matter how you cook them, but the high heat of the grill intensifies the flavor of mushrooms and adds a slightly charred touch that really turns them into something special. When I spotted this Grilled Portobello Mushroom Burger at Simply Recipes, it struck me as being a perfect Meatless Monday dish. Elise has dressed hers up with the addition of sun-dried tomatoes, spinach, and some grilled onion, but I think the grilled portobellos would also taste wonderful on a bun with just some mayo.   Read more >

Meatless Monday: Eggplant Sliders with Arugula Pesto

I've been on a one-woman crusade to get more people to like eggplant for a few years, so I love seeing out-of-the-box ways to cook this versatile vegetable. These Eggplant Sliders with Arugula Pesto from Hip Foodie Mom sound like they could become one of my favorite eggplant recipes yet. Alice broils the lightly breaded eggplant slices and then serves them with an arugula pesto that sounds amazing. If you have kids who may not go for the arugula part, you can skip the pesto or just use regular pesto made from basil.   Read more >
