Meatless Monday: Chipotle and Black-Eyed Pea Soup with Double Cilantro

It's the Monday before New Year's Eve, and since there's a vegetarian ingredient that's widely considered to bring good luck for the New Year, I thought this would certainly be the time to feature it! Of course I'm talking about black-eyed peas, something I've been recommending to BlogHer readers for years as a New Year's tradition. When I heard about this lucky food I started experimenting with it every year myself, and this Vegetarian Chipotle and Black-Eyed Pea Soup with Double Cilantro from Kalyn's Kitchen has become one of my favorites.
