Cheesy Tomato and Avocado Toasts

It's summer and the tomatoes are starting to appear at the farmers' market! When I have ripe garden-fresh tomatoes available I've been known to eat nothing but tomato sandwiches for days on end (just thick sliced tomatoes, toasted whole-wheat bread and mayo), but these Cheesy Tomato and Avocado Toasts from Amuse Your Bouche sound like a tomato sandwich variation that would definitely get my attention. Tomatoes. Avocado. Cheese. Toast. That's all you need and it doesn't get much better than this for an easy Meatless Monday dinner!
