Black Bean and Avocado Enchiladas

Black Bean and Avocado Enchiladas

There's a big chocolate-eating holiday coming up, and some of you may be thinking more about Valentines Day food than you are about Meatless Monday this week. Luckily, this amazing-sounding recipe for Black Bean and Avocado Enchiladas from Budget Bytes has you covered for both. The delicious enchiladas are vegan, and Beth says avocado provides the creaminess that you might normally get from cheese in an enchilada recipe. And the from-scratch sauce used for these enchiladas has a little bit of cocoa powder added for the extra something that chocolate always provides. Meatless Monday + chocolate; that sounds like true love to me.

Sandy serves this with a green salad and some extra sour cream and cheese on the side for people to add at the table, and I'm sure there are plenty of compliments when this is on the menu for guests.   Read more >

Slow Cooker Rosemary and Thyme Potato Soup

After I featured Brussels sprouts for my last two Meatless Monday posts, I promised something different this week, and I think this Slow Cooker Rosemary and Thyme Potato Soup from Barefeet in the Kitchen sounds like meatless comfort food at its best! Not only that, it can cook all day long in the slow cooker, just in case you might have a few things to do on the Monday before Christmas.   Read more >

Spicy Black Bean Stuffed Sweet Potatoes with Avocado Lime Sauce

In June the evenings are still pretty cool, and what sounds good is a dinner idea that's served warm, but still has flavors that signal the impending arrival of summer. I think these Spicy Black Bean Stuffed Sweet Potatoes with Avocado Lime Sauce from Dishing Up the Dirt sound perfect for spring-into-summer dinners, and if it does happen to be getting too hot for the oven where you are just use my favorite summer trick and cook the sweet potatoes in a toaster oven. This recipe has so many of the flavors I love; sounds like a perfect Meatless Monday dish to me.   Read more >
