Grilled Halloumi Cheese Skewers

Grilled Halloumi Cheese Skewers

Everyone has heard of grilled cheese, the sandwich, and what a beloved meatless dish it is. But for your Meatless Monday menu this Memorial Day, I'd like to recommend a recipe featuring a completely different type of grilled cheese. This recipe starts with halloumi, a cheese from the Mediterranean that has a high melting point. That makes it so the cheese can be fried or grilled, and cooking the cheese with one of those methods turns it golden brown and memorably delicious. I fell in love with halloumi cheese the first time I tasted it years ago, and these Grilled Halloumi Cheese Skewers with Mushrooms and Onion from Kalyn's Kitchen were one of the most-likely-to-be-repeated things I've ever cooked on my grill. I think this would make a perfect Meatless Monday dish, or this could be a lovely side dish for grilled foods any time you're cooking outside.

Now I'm a huge fan of stuffed peppers of every kind, and I came up with this recipe for Vegetarian Stuffed Peppers with Brown Rice, Mushrooms and Feta after a Kalyn's Kitchen reader requested vegetarian stuffed peppers last October.   Read more >

Slow Cooker Rosemary and Thyme Potato Soup

Not only that, it can cook all day long in the slow cooker, just in case you might have a few things to do on the Monday before Christmas.   Read more >

Turn Leftover Easter Eggs Into a Delicious Egg Salad Pita Sandwich

Planning a Meatless Monday dish to make on the Monday after Easter is a no-brainer for some people, because there are all those Easter hard-boiled eggs that need to get turned into something resembling a meal.
