Light Summer Dinner: Greek Pasta Salad

Light Summer Dinner: Greek Pasta Salad

One word that always gets my attention in a recipe title is "Greek." I love Greek flavors, but especially the combination of tomatoes, feta cheese, peppers, and kalamata olives that shines in so many Greek dishes. This Greek Pasta Salad from FoodieCrush has all those flavors, plus whole-wheat pasta, fresh basil, and a homemade Greek dressing featuring oregano. Pasta salad with all these wonderful ingredients going on is substantial enough to be a light summer dinner, and I think this sounds perfect for Meatless Monday. Heidi's post also spotlights a few meatless Mediterranean salads from other food blogs to feed your Mediterranean food craving!

One of my favorite meatless foods is hummus, a creamy dip made from pureed chickpeas and seasoned with garlic and tahini.  Recently hummus thoughts were swirling around in my head, and this recipe idea for tostadas made with hummus popped out.  If you're familiar with Mexican tostadas spread with refried beans, this is a Mediterranean variation where crisped flour tortillas are spread with hummus and then topped with finely chopped lettuce, Feta cheese, and Kalamata Olives.  I also drizzle the hummus with olive oil and sprinkle it with the Mediterranean seasoning called   Read more >

Warm-Weather Eating: Whole-Wheat Pasta Salad with Roasted Asparagus, Red Bell Pepper and Mushrooms

A few weeks ago I was wandering through the grocery store and found whole-wheat orecchiette pasta! (Here's how to pronounce orecchiette if you're not sure.) I love this pasta shape (whose name means "little ears" in Italian) and I knew immediately I'd be turning it into some sort of pasta salad. I happened to have asparagus and a few other veggies in the fridge, so this Whole-Wheat Orecchiette Pasta Salad with Roasted Asparagus, Red Bell Pepper and Mushrooms was the happy result.   Read more >

Mediterranean Grilled Vegetable Tartine

One of the things I love about summer is grilled vegetables, and this Mediterranean Grilled Vegetable Tartine from Panini Happy is a Meatless Monday dinner that has all those summer veggie flavors I crave. What's unique here is how Kathy grills the marinated vegetables on a panini grill, a perfect idea if you don't have an outdoor grill or don't want to bother heating it up. Then the delicious grilled vegetables are served open-face on grilled bread that's topped with a layer of hummus and the whole thing is sprinkled with some feta. I bet this will disappear pretty quickly!   Read more >
