Light Summer Dinner: Greek Pasta Salad

One word that always gets my attention in a recipe title is "Greek." I love Greek flavors, but especially the combination of tomatoes, feta cheese, peppers, and kalamata olives that shines in so many Greek dishes. This Greek Pasta Salad from FoodieCrush has all those flavors, plus whole-wheat pasta, fresh basil, and a homemade Greek dressing featuring oregano. Pasta salad with all these wonderful ingredients going on is substantial enough to be a light summer dinner, and I think this sounds perfect for Meatless Monday. Mediterranean Grilled Vegetable Tartine

One of the things I love about summer is grilled vegetables, and this Mediterranean Grilled Vegetable Tartine from Panini Happy is a Meatless Monday dinner that has all those summer veggie flavors I crave.
