Lazy Chiles Rellenos Breakfast Burritos

We had a snow day, with almost 15" of the fluffy stuff on the ground!!!

Sofia loved watching the "noooo" fall. :)

Our day was filled with lots of hot cocoa, warm gooey brownies, snuggling Sofia & putting away the laundry that's been scattered across the upstairs hallway for the past 3 days.

This Chiles Rellenos recipe is sure to spice up your Valentine's morning! It packs just the right amount of heat and makes the fluffiest eggs.

Lazy Chiles Rellenos

Adapted from Ree Drummond

Recipe makes 6 servings

 

Ingredients

1/2 c whole milk

5 eggs

Pinch of paprika, salt & pepper

1 - 4oz can of fire roasted green chilies (peeled & seeded), cut in half lengthwise

1 c shredded colby jack cheese

 

Directions

1| Preheat oven to 325 degrees

2| Mix together milk, eggs, paprika, salt and pepper

3| Lay the chilies on the bottom of a small baking dish

4| Top chilies with cheese and pour over the egg mixture

5| Fill a large baking dish with 1/2 inch warm water and place the egg mixture dish inside (so it creates a warm water bath to cook the eggs)

6| Bake 45-50 minutes or until completely set

 

You can cut them into squares and serve on corn tortillas or turn them into breakfast burritos, wrapping them in flour tortillas with some salsa. We froze our leftover burritos and popped them in the microwave the next day at work, 1 minute each side.
