Late Night. Hungry. Broke. (An Accidental Awesome Recipe)
It's late at night. My housemates are sitting around the table playing what looks like a rather complicated-looking card game while I read on the couch.
Gurgle. Grumble. Gruuummmmble. Gurgle. My stomach is alerting me to the fact that it is empty.
"I am guessing y'all have had dinner already?" I inquire hopefully.
"I could eat," says the skinny one, "depending on what it is."
Pizza comes to mind, but I am the only one with cash and out of the three of us, one can't eat melted cheese, one is a vegetarian, and I am just insanely picky. It is not financially viable to get three seperate pies. Damn.
"Sooo.....food?" There are glances in my direction.
I survey the kitchen. As usual, only random odds and ends, some frozen veggies, a couple of onions, tons of pasta, and random sauces. Ooh. We have eggs.
This is what happened.....
Vegetarian Asian Pasta Alla Carbonara (Serves 3 Hungry People)
-8 ounces of Spaghetti, Ramen, or other thin Pasta
-4 tbsp. each of Sweet Chile Sauce and bottled Kung Pao Sauce
-2 tbsp. butter
-2 bunches of green onions
-2 Single Serve Packets of Microwave Steamable Peas
Cook the pasta according to package directions (for Ramen type, a little under three minutes). Drain. Meanwhile, poach eggs until just barely firm. (You want the yolks still very soft or even a little runny to coat the pasta.) Microwave the peas and chop the green onions. Saute the pasta in the butter, Kung Pao, and Sweet Chile sauces. Divide into three large bowls. Top each bowl with 1/3 of the peas, two eggs, chopped green onions to taste, and a little kung pao sauce. Serve with chopsticks.
