The Kids Cook Monday: Asparagus Noodle Salad with Sesame Ginger Vinaigrette

A salad with lots of interesting Asian flavors sounds like a perfect Meatless Monday dinner when it's hot outside, but you might be wondering, "Can I get my kids to eat it?" Andrea Meyers has a great way to solve that problem; every Monday she enlists her kids to help cook dinner and then shares those recipes on her blog in a feature she calls The Kids Cook Monday. This Asparagus Noodle Salad with Sesame Ginger Vinaigrette is something she made with her kids recently. I love this recipe as well as the family tradition of cooking together, no matter what's on the menu.
