Homemade Berry Granola
I've been making granola for a few years now and decided what better way to kick off the new year than with a fresh batch. I use a tried and true recipe from one of my favorite food mentors, The Barefoot Contessa. With a few tweaks, I made the granola with my favorite dried fruit combinations. The great thing about making granola is that you can go crazy with the add ins. Just get the base of the granola made and mix and match away at your dried fruits and nuts!

Homemade Berry Granola adapted from Barefoot Contessa (makes 12 cups)
Large baking sheet
Small mixing bowl
4 cups of old fashioned oats
2 cups sweetened coconut
1 cup sliced almonds
3/4 cup vegetable oil
1/2 cup honey
1 tsp to of pure vanilla extract
1 cup dried blueberries
1 cup dried cherries
1 cup cranberries
*you can change the fruit or add nuts if you'd like. I didn't add any additional nuts. I just went with the slice almonds
Pre-heat your oven to 350 degrees. Mix the oatmeal, coconut and almonds in the large bowl. Add the honey, oil and vanilla to the small bowl and whisk until well blended. Add the honey and oil mixture to the oatmeal mixture until coated. Spread onto your large baking sheet and bake for 30-45 minutes. *I had more granola to bake than my sheet would allow for so I had to add some granola to a smaller baking sheet and cooked for a shorter period of time* Periodically check the granola and turn so that all of the mixture gets a nice golden brown. Once oatmeal mixture is done, add back to the large bowl and toss with the dried fruits. Enjoy!
