Fast and Clean Weeknight Dinner

Happy Friday everyone!!  I'm so excited the weekend.  Let's talk about this Chicago weather we are having right now.

Nearly 50 degrees tomorrow and over 50 today!  For mid January, I'll take it!  We can ignore the low of 19 on Sunday :(

OMG, I have to tell you, I made the most amazing cookies yesterday!  I changed Katie's recipe here just a little bit and experimented with coconut sugar.  I subbed 1/2 of the brown sugar for coconut sugar.  The results were a great gluten free  chocolate chip peanut butter cookie that my daughter and  husband both loved!


Alright, let's move onto dinner.  I know we started with dessert, and that's always fine in my book.  Ever come home from work and wonder what to make for dinner?  This is an easy weeknight hit in our house and it takes less than 15 minutes to prepare!

IMG_2833Cut two chicken breasts into 1 inch pieces and season them with oregano, basil and some italian seasoning.  Saute the pieces for about 5-6 minutes over medium high heat until they are cooked through.

IMG_2834Add in a chopped shallot and  1/2 of a chopped onion and a couple of  chopped cloves of garlic.

IMG_2835Add in 1/3 cup of sun-dried tomatoes and 3/4 to a full cup of artichokes (I love artichokes so I always put more in.)  Cook for a 3-4 more minutes.  You can also add about a 1/4 cup of tomato sauce in the final minute.  It's totally optional though.

I served it up with roasted broccoli and brussels sprouts and quinoa.
