Delicious Summer Treats

Summer seems like the perfect time to have decadent treats with the kids, doesn't it? Here are a couple of the delicious treats we've made this week.

Homemade "Magic Shell" Chocolate Topping
homemade magic shell topping1.5 C chocolate chips (we used milk chocolate)
3 tbs virgin coconut oil

Melt coconut oil first in a pot over medium-high heat, it only takes seconds for this stuff to melt. Then, add the chocolate chips, stirring continuously until combined. Let it sit for about 3 minutes before drizzling over cold ice cream. It'll harden within a minute and adds the most awesome coconutty chocolatey flavour!

Perfect Pretzel S'Mores

mini marshmallows
chocolate chips

Lay pretzels on a parchment paper-lined baking sheet. Top with two mini marshmallows on each, and then two chocolate chips on top of the marshmallows. I'm not gonna lie -- this is a fiddly project. Most days I'd call it "Ain't Nobody Got Time Fo Dat" Pretzel S'Mores because seriously, who the hell has time for this? Well,  I did one evening.

Melt in 350° oven until marshmallows have browned, then remove baking sheet from oven and immediately top with another pretzel square.

I think I really need to start an exercise routine if I'm planning to survive till the fall...

Vegan Tuesday: S'mores: Childhood Classics Reinvented!

I'm a sucker for s'mores. I didn't camp much when I was younger, so I don't know where my penchant for this dessert arose, but whenever I see it on a menu, it's sooooooo hard for me to resist. The combination of marshmallow (roasted over a fire, of course, so you can get that toasty burnt mess) and chocolate chunk (which also melts from the heat of the marshmallow), sandwiched between two cookies and it becoming an ooey-gooey mess all over?
