Chicken Enchilada Lasagna...From pintrest of course
Todays recipe is not healthy, but dang good!! I love love love Mexican food, it's my weakness. I found this recipe for Chicken Enchilada Lasagna on Pintrest and thought it sounded easy enough so I threw it together and wow, was it good!
2 tbsp of vegetable oil
1 lbs chicken breast, chopped to bite pieces
5 cups of mexican blend cheese
1 can of cream of celery
1 can of cream of chicken
1 1/2 cups sour cream
1/4 cup canned and chopped green chillies (drained)
small corn tortillas
1 tsp cumin
2 tsp salt
1/2 tsp pepper
**Instead of cooking chicken, I got one of those whole rotisserie chickens from the store and cut it up, I also mixed the spices into the soup mix. I used cumin, garlic powder and ground red pepper***
Mix your soups, sour cream, and chiles together. You are going to put 1/2c of the soup mix in the bottom of the pan.
Then you will cover that with tortillas (I cut mine in half and put the straight edges facing the outside of the pan and then a round one in the middle).
Then put some of the soup mix on top of the tortillas, add some of your chicken and then cheese.
You keep going until you are out. I think I was able to make 2 soup, chicken, cheese layers and then the last layer will just be the rest of the soup mix and cheese.
I baked mine on 350 for about an hour or until it looks all bubbly.
