I'll admit itI'm a little shocked to have woken up this morning to find it's already November. The only holiday preparation I've done this year is to purchase plane tickets for a trip to visit family at Thanksgiving. There's a lot to do, and that doesn't even count the dishes I'll need to make to bring to parties, the food gifts I'll want to give, or the menus I'll want to plan along the way.
Some people are totally prepared for the season. One of my coworkers told me yesterday that she and her husband, over the weekend, had figured out their Thanksgiving menu theme and their primary dishes, and had already assigned out contributions to friends who'd be joining them for the holiday meal. She was thrilled to launch the season with that major planning piece out of the way.
But many of the rest of us aren't quite so prepared! - We'll wrap up each week with a look at great cookbooks that will make excellent gifts, whether that's for a friend, or for yourself!

I know it sounds boring, but making a plan is my key to holiday sanity. I'm responsible for Thanksgiving in another city and in someone else's kitchen, a holiday open house for 75, Christmas Eve for 12, and Christmas day in our jammies for 5. If I didn't take the time to plan I'd be a basket case. I save my plans from year to year so i can reuse recipes, to-dos, and more. I'm also a big fan of prep-ahead dishes and buying really interesting, quality goodies from local vendors to supplement my own cooking.

Pick a school day, if your little ones attend, or a weekend day that Dad can whisk them away for a movie. You are going to CHOP, CHOP, CHOP some veggies! Onions, celery, garlic: whatever you use the most over the next couple months of cooking. Store pre-measured amounts in ziplock bags and toss them in the freezer.
While you are chopping, toss the leafy stalks and outer tough layers of onion in a big pot of water. Tell the meat department you'd like to make chicken stock, and ask for some discarded or super cheap cuts. Toss in the pot. Boil, simmer a few hours, strain the fat and drain the stock. Freeze in Ball plastic jars.

Hey Genie! I love the Holidays, it's all about family, friends, good times and of course great food. I am a list person which helps me organize the menu, shopping and to do list. I will be posting my surival plan for the holidays on my blog.
