Black Bean Burgers with Cheddar Cheese and 10k Training

Sometimes with the good comes the bad and the ugly.
Here’s a ZOOMA training recap of Saturday.
It was an awesome turn out and finally a beautiful day.
Charm City and ZOOMA treated us like kings and queens.
There were bagels and cream cheese, mimosas, swag bags, coffee and more!
Another awesome perk – we got to meet other Annapolis ZOOMA Ambassadors, in person!
We had a choice to run 3 or 5 miles – I chose 3. Sunday is my long run with Charm City training and I wanted to be up for it.
And to be perfectly honest, I jinxed myself out of the whole run.
I was up early. Had everything ready. Got up at 4am and cleaned my bathrooms since my mom was coming over. I just wanted to make sure everything was in order for her. Call me crazy, but I’ve been called worst!
2 cups of coffee in and my belly started grumbling. Maybe I got up too early, but I ignored it. By 7 am, I was starving. So I ate a banana and drank an electrolyte drink since I had two cups of coffee instead of one. I was trying to balance it out, but this was not my norm.
A double accident occurred on the highway and I witnessed some unpleasant gestures and road rage. Great. I’m now behind.
Running into the store and feeling rushed was how it began. Feeling like I’m behind or late always leaves me edgy. I don’t like it at all!
We started the run and I was pretty much near the end of the line. I watched as runners passed me by…I watched as they had buddies chit chatting on the road. And for whatever reason, a flood of negative thoughts came through my head.
My insecurities of my appearance and ability to run started taking over. I wish I could have just turned them off, but I didn’t. I looked behind me, nobody was there. I lost sight of the girl in front of me. Now I was questioning where I was going or even if the 5 mile people came in before me. Why was it so easy to run 5 miles last week? Why are three miles giving me such a hard time? I love running on the road. I love running in the morning. I love running but this was just frustrating.
When I finally made it back, I was happy to see the 5 milers were not in front of me. Shew. I felt somewhat relieved but still Loserish.
When they arrived, we took some awesome photos of our ambassador group and even a number 1 fan snuck in.

The training run couldn’t have been hosted any better. Kudos to Charm City and Zooma for hosting a sweet event!
I always thought I was a singer. I was sent to All-County Chorus in High School and made it to the state. One of my favorite songs to sing, Monsters by Eminem ft. Rihanna
So I did what any famous blogger (haha!) would do ..and recorded myself singing.
Only then, did I realize I really can not sing.
Yes, I’ll show you the ugly if you dare.
You were warned!
I can’t leave you with something ugly. It’s just not me in it to do it. So I’ll give you something good…..like Black Bean Burgers with Cheddar!
I usually make them with these ingredients:
- 1 can (15 oz) black beans, drained and rinsed
- 2 spring onions: chopped (green and white parts)
- 1 small yellow onion (diced)
- 1/4 cup plain bread crumbs
- 2 egg whites
- 1 Tbs. coriander
- 1/4 tsp cumin
- 1/4 tsp onion powder
- 1/4 tsp dried basil
- Cheddar Cheese
- Hamburger buns (optional)
Place in a food processor and blend – form patties – heat oil and cook for 5-7 minutes each side.
Tonight, I had very little ingredients. Uhm, really little and was looking at the “end of the pantry.”
But still taste delicious if not better. Sometimes simple can be better.
