Banana Oatmeal Chocolate Chip Muffins
I love chocolate. That's the understatement of the year, actually. So, moving right along with that chocolate theme- I have my good 'ol standby muffin recipe for you today! I've tried other muffin recipes, but they just don't compare. It must be the chocolate, I don't know. I originally made up this recipe when I was in university and since then have adapted it, giving it a few tweaks along the way. I think at one point I had sour cream in the mix- which made the muffins wonderfully tender- but come on now, I don't have room for those extra calories anymore!

Ashlyn's Banana Oatmeal Chocolate Chips Muffins (wow, that's a mouthful...)
3/4 cup butter
3/4 cup granulated sugar
1 tsp. vanilla
3 ripe bananas
1 cup oatmeal
2 cups flour
1 tsp. salt
1 1/2 tsp. baking soda
1/2 cup chocolate chips
Preheat oven to 350 degrees. In a large mixing bowl cream together softened butter and sugar. Beat in eggs and vanilla. Mash bananas, then add to mixture and combine well. Stir in dry ingredients. Add chocolate chips. Spoon into greased or lined muffins tins, filling about 3/4 full. Bake for 18-20 minutes.
Sidenote: For a healthier recipe, you may add 1/4 cup of ground flaxseed to the mixture and/or reduce butter to 1/2 cup. Enjoy!
