5 Quick and Easy Vegetarian Dishes Which Will Please the Whole Family
I am constantly asked for quick and easy vegetarian dishes that kids will eat. Look not further. For those vegetarian families out there that have great eaters, many of us envy you. I am always in awe of kids who eat all kinds of vegetables with no fuss. But, for my son eating has always been a challenge. To this day, I have to still give him the first bit of new foods to get him going and so that he doesn’t think I am poisoning him with that ever present green vegetable….
So this week, I have chosen some of our favorite vegetarian dishes that even my picky son will eat. As with all my dishes, I believe that it is important that he eats what we eat, so I am always trying to find creative ways to get him to try everything on the plate. I find that dishes with a whole lot of flavor and a few simple ingredients are the best. I will admit though that sometimes I don’t tell him what he is eating until he has finished his plate.
So, this week why not try my Whole Wheat Penne with Kale Pesto, full of greens but disguised in a pesto that is savory and super tasty. This is a great dish year around! Another favorite is my Grilled Eggplant, Red Pepper and Tomato Focaccia Sandwiches. This dish my husband I eat as a sandwich but my son likes the ingredients separate. Each ingredient is uniquely flavored which is always a winner in our house. Then for those kids out there that love their veggies, try this light meal- Arancini with Salad. I made this for my friend who has pickier kids than mine and the kids devoured it! Mexican is also an all time favorite in our house so Vegetarian Tostadas with Homemade Refried Beans is always a winner. If you don’t have time to make your own beans and let’s be honest few of us do, just buy them canned. Voila! Dinner in no time. Lastly, we love my Yummiest Peanut Tofu Stir-Fry Ever. It is by far the easiest way to introduce tofu to kids.
