Yam and Spinach Frittata

ingredients:

    1 yam, peeled and cut into small pieces

  • 2C spinach, cut into small pieces
  • 12 eggs
  • 1C egg whites (optional)

directions:

Preheat oven to 400F and spray muffin tin with EVOO.

Beat eggs and egg whites together. Mix in yam and spinach.

Divide among 12 muffin tins and bake for 20 minutes.

Serves 6 (a serving is 2).
